Ingredients
2cupsbuttermilk
½cupold-fashioned rolled oats
⅔cupwhole-wheat flour
⅔cupall-purpose unbleached flour
¼cupwheat germ
1½tspbaking powder
½tspbaking soda
¼tspkosher salt
½tspground cinnamon
¼tspnutmegfreshly grated, if possible
2ex-largeeggs, room temperaturelightly beaten
¼cuplight brown sugarlightly packed
1tbspcoconut oilmelted
2tsppure vanilla extract
Instructions
Place oats in a medium sized bowl and stir in buttermilk. Allow to stand for 15 minutes.
In a large bowl, whisk together remaining dry ingredients. Add melted coconut oil and mix until well incorporated into the dry ingredients.
Add eggs, sugar, and vanilla to the oat mixture and then add to large bowl with the dry ingredients. Mix until just moistened.
Spray a waffle iron with cooking spray and preheat. Spoon approximately 2/3 cup onto preheated waffle iron and cook until waffles are crisp and golden.Repeat with remaining batter and serve with your favorite toppings.
