Fresh Egg Pasta
A food processor will make really quick work out of this. Very important not to skip the step of allowing it to rest for 30 minutes before rolling it out into sheets.
- ¾ cup all-purpose flour
- ½ cup semolina flour
- 1 tsp salt
- 3 ex-large eggs
- 2 tbsp extra-virgin olive oil
Put flours and salt into work bowl of food processor and pulse twice.Add eggs and olive oil.Pulse and then process until dough comes together.Rest in refrigerator for at least 30 minutes before rolling out.
