Turkey Tetrazzini

Ingredients

  • 4 cups left over turkey cut or pulled into bite sized pieces
  • ½ lb fresh mushrooms sliced
  • 6 tbsp butter divided
  • ½ lb spaghetti
  • 3 tbsp all-purpose flour
  • 2 cups chicken or turkey broth
  • 1 cup heavy cream
  • 2 tbsp sherry
  • Grated Parmesan Cheese

Instructions

Sauce

  • Melt 3 tablespoons butter, blend in flour and add broth, stirring and cooking over low heat until smooth and thickened. Add cream and sherry.
  • Sauté mushrooms in 3 tablespoons butter for 2-3 minutes.
    Cook spaghetti according to package directions.
    Mix half the sauce into the turkey and the other half of the sauce into the mushrooms and spaghetti.
    Place the spaghetti mixture into a baking dish, making a well in the center for the turkey mixture.
    Sprinkle grated cheese over all and bake in a 350°F oven until lightly browned.
