Diane's Soft and Chewy Peanut Butter Cookies

We always have one of two kinds of cookies in our house at all times and this is one of them. This great cookie recipe comes from my mother-in-law's kitchen. They are easy to make and the cookies are spectacular - SOFT and CHEWY.

Ingredients

  • 1 cup brown sugar
  • 1 cup granulated sugar
  • 1 cup Crisco
  • 1 cup peanut butter either chunky or smooth
  • 2 ex-large eggs
  • ¼ tsp salt
  • 1 tsp baking soda dissolved in 1 tbsp HOT water
  • 1 tsp pure vanilla extract
  • 3 cups all-purpose flour

Instructions

  • Preheat oven to 350° F.
    Cream together the sugars, Crisco and peanut butter.
  • Add eggs, salt, baking soda in water and vanilla extract. Mix well. Stir in flour to for, dough.
  • Roll dough into walnut sized balls and flatten with a fork dipped in sugar.
    Bake in preheated oven 10-12 minutes. Cool on racks until set.
