My friend, Gayle, who knows a thing or two about celebrating St. Paddy's Day in style, shared this spectacular Reuben sandwich recipe with me. It is the BEST I have ever tasted!

2slicesRye BreadMarble Rye is my favorite choice
2tspbuttersoftened
2slicesSwiss cheese
1ozspecial thousand island dressing
½cupsauerkrautdrained (seasoned with chili garlic sauce)
1tspchili garlic sauce
6ozcorned beefsliced
Special Thousand Island Dressing
1½cupmayonnaise
⅚cupcatsup
1½tbspdill pickle relish
⅓tspdill weed
⅓tspblack pepper
Instructions

Butter bread - put butter side down on griddlePut corned beef on griddle to get hot. Spray with a bit of waterPut one slice of cheese on each piece of bread (off-set so every bite gets some cheese)Put Special Thousand Island Dressing on both pieces of breadMix kraut and chili sauce together and put portion on griddle to heat throughPut corned beef on top of Spcial Thousand Island Dressing. Top with kraut and put other slice of bread on top. Grill until hot and cheese has melted.Cut, plate and ENJOY!
Special Thousand Island Dressing
Mix and chill all ingredients. If covered and chilled well, it will easily last 2 weeks.
