INTERNATIONAL WAFFLE DAY 2022

International Waffle Day

March 25th is International Waffle Day.  It is known as  Våffeldagen in Sweden, which is where the holiday originated.  March 25th is considered the start of spring in Sweden and Europe and is the Feast of the Annunciation, (Lady Day).  It became a custom for Swedish families to celebrate the two holidays by making waffles on this day.

The original waffle dates back to Greece in the 1300’s.  The Greeks cooked flat cakes between two metal pans and topped them with herbs and cheeses.  

Way To Waffle

I woke up with a purpose; TODAY I am going to clean my dirty house!  ……Just as soon as I get home from a good workout.  

My exercises took a little over an hour and as I was going to the locker room to get dressed, I saw some friends visiting and decided to sit down to chat for a bit before showering and heading home.  (After all, it was still early).   

I pulled into the driveway, picked up the newspaper on my way into the house and the Sudoku puzzle inside was calling my name. I read a couple headlines,  made a pot of tea and made quick work of the puzzle.  

Just as I started to gather my cleaning supplies, I realized that I had a card to make for a friend who isn’t feeling well.  Knowing that I still had time to get it into today’s mail, I was off to my craft room to create.

I got the card in the mail, with time to spare and began to make my way up the stairs to start my cleaning when it occurred to me that today is International Waffle Day and I happen to have an amazingly wonderful recipe for waffles to share!   

The house likely won’t get cleaned today, but I will plan on getting it done tomorrow… after I get home from my tennis date.  And, now that I have effectively waffled away the day, let’s talk about that great waffle recipe!

Equipment

  • Waffle maker

Ingredients

  • 2 cups buttermilk
  • ½ cup old-fashioned rolled oats
  • cup whole-wheat flour
  • cup all-purpose unbleached flour
  • ¼ cup wheat germ
  • tsp baking powder
  • ½ tsp baking soda
  • ¼ tsp kosher salt
  • ½ tsp ground cinnamon
  • ¼ tsp nutmeg freshly grated, if possible
  • 2 ex-large eggs, room temperature lightly beaten
  • ¼ cup light brown sugar lightly packed
  • 1 tbsp coconut oil melted
  • 2 tsp pure vanilla extract

Instructions

  • Place oats in a medium sized bowl and stir in buttermilk. Allow to stand for 15 minutes.

  • In a large bowl, whisk together remaining dry ingredients. Add melted coconut oil and mix until well incorporated into the dry ingredients.

  • Add eggs, sugar, and vanilla to the oat mixture and then add to large bowl with the dry ingredients. Mix until just moistened.
  • Spray a waffle iron with cooking spray and preheat. Spoon approximately 2/3 cup onto preheated waffle iron and cook until waffles are crisp and golden.
    Repeat with remaining batter and serve with your favorite toppings.

Favorite Fabulous Fluffy Waffles

Beaten egg whites in this recipe are the secret to light as air, crispy waffles. Definitely my "go to" waffle recipe.

Equipment

  • Waffle Iron(s)

Ingredients

  • 2 tsp baking powder
  • ½ tsp kosher salt
  • 3 tbsp granulated sugar
  • 2 cups all-purpose flour
  • 4-6 eggs depending on size (I use 4 jumbo)
  • cup whole milk
  • 6 tbsp vegetable oil

Instructions

  • Sift dry ingredients into a large bowl
    In a small bow, beat egg whites until stiff
    Beat egg yolks in a batter bowl
    Add milk and oil to the beaten egg yolks
    Add dry ingredients to the liquid
    Fold in beaten egg whites, being careful not to deflate
  • Bake and serve with desired toppings

Macaroni and Cheese Waffles!

So breakfast waffles aren’t your thing? No problem! Here is a recipe that I can definitely get behind by J. Kenji López-Alt, author of The Food Lab: Better Home Cooking Through Science. Pasta, lots of cheesey deliciousness and an intoxicating crunch! 

IDEA: Why stop there? If you really want to get into the spirit of things, top these with: seasoned taco meat or shredded chicken, peppers, onions, jalapeños, guacamole, sour cream, salsa, anything you like. YUM!

The Cricut is my secret to fast and easy card making.  Using my iPad, I simply selected a design in Cricut Access.  For this card, I used the “I’m Sorry Word Bubble Card” and customized it to say, “Thinking of You”.  I chose my colors, papers and embellishments and let the Cricut do it’s magic.  For the envelope, I used a brayer and an ink pad to create a contrasting color and then glued the word bubbles in place.
